Immune-Boosting Creamy Mushroom Soup Recipe 

Ingredients: 

  • 1 tablespoon olive oil or butter 
  • 1 medium onion, diced 
  • 2 medium carrots, peeled and chopped 
  • 2 cloves garlic, minced 
  • 1 large potato, peeled and cubed 
  • 2 cups shiitake mushrooms, roughly chopped 
  • 1/2 cup gluten-free oats 
  • 4 cups chicken bone broth 
  • 1/2 cup oat milk 
  • 2 whole cloves (or 1/4 teaspoon ground cloves) 
  • 1/2 teaspoon dried thyme (optional) 
  • 1 bay leaf 
  • Salt and pepper to taste 
  • 1/2 cup regular mushrooms, thinly sliced (for garnish) 
  • Fresh parsley or chives for garnish (optional) 

Instructions: 

1. Sauté the Vegetables 

Heat olive oil or butter in a large pot over medium heat. Add the diced onion and sauté until translucent, about 3 minutes. Stir in the carrots, garlic, and potato, cooking for another 3-4 minutes. 

2. Cook the Mushrooms 

 Add the shiitake mushrooms and sauté until they release their moisture and soften, about 5 minutes. 

3. Add Broth, Oats, and Spices 

Pour in the chicken bone broth, then stir in the gluten-free oats, cloves, thyme (if using), and bay leaf. Bring the mixture to a boil, then reduce to a simmer. Cook for 15-20 minutes, or until the potatoes, carrots, and oats are tender. 

4. Blend the Soup 

 Remove the bay leaf and cloves (if whole). Let the soup cool slightly, then blend using an immersion blender (or transfer in batches to a blender) until smooth. 

5. Incorporate Oat Milk 

 Stir in the oat milk and heat gently, ensuring the soup doesn’t boil. Adjust the seasoning with additional salt and pepper to taste. 

6. Garnish with Regular Mushrooms 

 Lightly sauté the thinly sliced regular mushrooms in a small skillet with a touch of olive oil or butter for 1-2 minutes. Add them as a topping for texture and flavor.
